My uncle Randy is a professional chef and says this pie can't be beat! I’ve had it a couple times and he’s right, it’s really amazing. A great substitute for pumpkin pie for all the haters. First Layer: Whisk ingredients below and pour into 1 unbaked pie crust.

Ingredients
- 1 lb. Sweet potatoes (about 2 med. or 1 large), bake till tender, peel & mash
- 1 egg
- ½ c maple syrup
- pinch salt
- ½ tsp EACH nutmeg and cinnamon
- 1 tsp vanilla
- Second Layer: Mix all ingredients in a separate bowl and pour gently over top of first
- layer.
- ½ cup each white and brown sugars
- ½ tsp vanilla
- 3 eggs
- 1 ½ chopped pecan pieces

Bake at 375 until deep brown, (edges should be set and the middle should be a little jiggly).

Crust (if needed): In your food processor combine 1 1⁄2 c flour with 1⁄2 c cold butter, cut into small pieces. Shake a dash of salt in there. Process in pulses till coarse crumbs form. Add about 3-4 T ICE Water - not too much, just enough to moisten and form a loose ball. Remove, knead lightly and wrap in plastic; refrigerate at least 1⁄2 hour. Roll out on lightly floured surface.
