Ingredients

  • 3 lbs Bone-in Pork Chops, 1 inch cube
  • 2 cups Sweet Gherkin Pickle Juice (or 2
  • 2 Large Onions, chopped cups vinegar with 2-3 T brown sugar)
  • 2 Green Bell Peppers, chopped
  • ¾ cups Soy Sauce
  • 2 Colored Bell Peppers, chopped Slurry Cornstarch + Water
  • 6 stalks Celery, chopped on the bias Red Pepper Flakes
  • 2 cups pineapple chunks S&P
  • 1.5 cups Pineapple Juice

Method

    Heat olive oil in a LARGE pan (5 qt saute). Cook pork until nice and folden brown. All the flavor comes from the brown parts in the pan, so get it brown! Remove pork to a plate and set aside.

    Place onions, celery and peppers in pan. Cover and steam until vibrant. Once veggies are steamed, but still have bright color, add pork back to the pan.

    Add pineapple juice, pickle juice and soy sauce. Bring to a low boil, add slurry. Enough to thicken. Once thick, add lots of S&P and red pepper flakes to taste. Serve with warm rice.
