From Alice Farnsworth Oertle (my great-grandma). Great tasting fudge recipe. My Mom loves it and made it for us as kids. You can skip the maple and follow Grandma’s note.

Ingredients
- ¼ cup butter (no substitutes)
- ¼ tsp salt
- 1 cup white sugar
- ¾ cup nuts, coarsely chopped
- 1 cup brown sugar Vanilla and maple flavoring
- ¾ c sour cream (real)

*Melt butter in heavy saucepan; stir in sugars and sour cream. Bring to a boil, stirring constantly. Put lid on pan and turn heat to low. Let cook for 5 minutes. Remove lid; let cook about 15 minutes on moderate heat. Test in cold water, continue to cook and test until mixture spins into strings in ice water (firm but not hard). Remove from stove. Have three dinner plates buttered. Divide hot candy evenly on the plates- Add ¼ tsp. vanilla and ¼ tsp. maple to EACH of the plates. Allow to cool about 20 minutes. Stir each plate alternately until it thickens and loses gloss. Stir in nuts; combine in buttered pan to cool completely. Grandma’s Note: This fudge has a tricky personality but is-well-worth the effort. By adding 3 squares of bitter chocolate in the beginning and continuing in the same manner you can have a good chocolate fudge.
