This recipe comes from my Mami Silvia and is my favorite homemade enchilada recipe.

Ingredients
- 18 Corn tortillas
- ¼ cup flour
- 3-4 cups grated cheddar cheese
- 3-4 cubes beef bouillon
- Sauce:
- 4 cups hot water, divided
- 1 medium onion, chopped
- 4 large cloves garlic, crushed or minced
- 3-4 T chili powder
- ½ tsp. salt
- ¼ cup oil
- ¼ tsp. pepper

Method

Sauté onions and Garlic in oil over medium heat for a couple of minutes. Add flour, chili powder, salt and pepper. Add half of water and stir briskly till all lumps are gone. Add rest of water and beef cubes. Bring to a boil and then taste and add more beef cubes or chili powder if necessary. It should taste a little bit spicy, beefy and garlicky. It will not be very thick. Pour about 1 cup into the bottom of a 9 x 13 casserole dish. In a small skillet heat the tortillas one by one, turning once so each is soft and pliable. Working quickly, place the hot tortilla on a small plate and put in about 2 T of grated cheddar cheese.

Roll and set in pan. Continue until finished, letting the next tortilla heat as you are rolling the previous one. The pan should fit 12 across from side to side and then 3 each next to each other at the ends. Pour the remaining sauce over tortillas and sprinkle with any leftover cheese if you want. Bake for about 20-25 minutes at about 350.
