Shaina’s Chicken Chowder, preserved in the Brown Family Cookbook 2020.

Ingredients

  • 2 T butter or olive oil
  • ¼ cup heavy cream (or evaporated milk)
  • 6 carrots sliced + a shot of milk ~⅛ of a big onion
  • 1 bay leaf
  • 1 clove minced garlic
  • 1 large chicken breast, chopped up (or
  • ¼ tsp thyme (or herbes)
  • ½ a rotisserie chicken)
  • 3 T flour
  • 3-5 medium potatoes, cut in cubes
  • 2 cup chicken broth + 4 cup water + a ~2 tsp fresh parsley little bouillon
  • Salt and pepper to taste
  • 1. Cook carrots, onion, and salt in the butter, in a pot, until soft (~7 mins)
  • 2. Stir in garlic and thyme (15 sec) and then add flour, taters, broth, water, cream,
  • and bay leaf. Simmer till thickens, about 10 mins.
  • 3. Add salt and pepper to taste
  • 4. Add raw chicken chunks and continue to simmer till cooked through, about 10
  • more mins.
  • 5. Remove bay leaf and add fresh parsley and corn
  • 6. Eat up! Good with fresh bread :)
