Recipe from a family friend in Shanghai that immediately became a staple in our house. I haven’t had another quinoa salad nearly as good as this one. It is a great dinner to make along with some simple quesadillas. Vegetarian too!

Ingredients
- 4 cloves garlic, peeled and chopped
- salt and pepper to taste
- 1 ½ cup uncooked quinoa
- 2 cans corn kernels, rinsed
- 1 T. vegetable oil
- 1 (15 ounce) can black beans, rinsed
- 1 ½ onion chopped and drained
- 3 cups vegetable broth
- 1 ½ cup chopped fresh cilantro
- 2 teaspoon ground cumin
- ⅔ -1 cup green tomatillo sauce/salsa (spicy is good)

Method

Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned. Transfer to a medium bowl. Mix quinoa into the saucepan and cover with vegetable or chicken broth. Bring the mixture to a boil. Cover, reduce heat, and simmer 15-20 minutes. Fluff. Add remaining ingredients into the bowl, including COOKED quinoa. Mix well and season with salt and pepper to taste.
