This is the cookbook’s classic pancake recipe: a thick, slightly lumpy batter that gets a short rest before it hits the griddle.

Ingredients
- 1 cup all-purpose flour, sifted
- 2 tsp baking powder
- Pinch of salt
- 2 Tbsp white sugar
- ¾ cup plus 2 Tbsp milk
- 1 large egg, beaten
- 2 Tbsp unsalted butter, melted
- 1 tsp pure vanilla extract
- Canola oil or another vegetable oil, for cooking

Method

Combine the flour, sugar, salt, and baking powder in a bowl and mix well.

In a separate bowl, mix the egg, milk, vanilla, and melted butter. Let the butter cool first so it does not cook the egg.

Pour the wet mixture into the dry ingredients and stir until mostly incorporated. The batter should be thick and a little lumpy, without visible streaks of flour. Add a little milk if it is too thick to work with.

Set the batter aside for 5–10 minutes.

Lightly oil a griddle or pan. Cook until bubbles form and the underside is golden, then flip and brown the second side.
