Ingredients
- 1½ cups all-purpose flour
- 1½ tsp baking powder
- ¼ tsp salt
- 1½ cups semisweet chocolate chips, divided
- 6 Tbsp (¾ stick) butter, softened
- 1 cup sugar
- 1½ tsp vanilla extract
- About 1 tsp peppermint extract
- 2 eggs
- Confectioners’ sugar, for coating

Method

Combine the flour, baking powder, and salt in a small bowl; set aside.

Melt 1 cup of the chocolate chips in a small saucepan over low heat.

Beat the butter and sugar in a large mixer bowl until creamy. Add the melted chocolate, vanilla, and peppermint extract.

Beat in the eggs, then gradually beat in the flour mixture. Stir in the remaining ½ cup chocolate chips.

Wrap the dough in plastic wrap and freeze for 30 minutes, until firm.

Heat the oven to 350°F. Shape the dough into 1-inch balls and coat with confectioners’ sugar.

Place on ungreased cookie sheets and bake for 10–12 minutes, until the tops look cracked.

Let stand on the sheets for 2 minutes, then transfer to cool.
