This is called “Aona no goma-ae” in Japanese. It was my favorite side-salad in Japan. If you use frozen spinach it only takes 5 min to make. Goes GREAT with Teriyaki Salmon.

Ingredients
- 1 bunch fresh spinach, or 1 box frozen,
- 2 T sugar chopped spinach - THAWED
- 1 T soy sauce
- ⅓ cup sesame seeds, roasted, ground Several shakes salt (if needed)

Wash spinach and remove most of the long stems. Break with fingers or chop with a knife into small pieces- Cook in microwave or small pan with a bit of water until wilted. Thoroughly squeeze excess water from cooked spinach (whether boxed or fresh) and place “dry" spinach in a small serving dish. In another bowl, combine: sugar, soy sauce and ground sesame seeds. Taste dressing mixture - it should be slightly sweet and nutty and look kind of like a paste. Dump onto spinach leaves, rub the paste into the leaves with your fingers until leaves are evenly coated. Add salt to taste. Serve room temp.
