A proper old-fashioned gingersnap: warmly spiced, rolled in sugar, and chilled before baking so the dough is easy to shape.

Ingredients
- ¾ cup butter (1½ sticks)
- ¾ cup granulated sugar
- ½ cup molasses
- 1 egg
- 2¼ cups flour
- 1½ tsp baking soda
- ¼ tsp salt
- 1 tsp cinnamon
- ½ tsp ginger
- ⅛ tsp cloves
- Extra granulated sugar, for rolling

- Family substitution: use honey at four-fifths of the molasses amount.

Method

Cream the butter and sugar together until light and fluffy.

Add the molasses and egg, then mix well.

Sift in the flour, baking soda, salt, cinnamon, ginger, and cloves. Mix well.

Chill the dough for 2 hours.

Heat the oven to 375°F. Form the dough into balls and roll them in granulated sugar.

Bake for 10–12 minutes.
