German Pancakes (AKA Triceratops)

In my mom’s words, “When Braxton was little I took it to the table one morning when he was in his dinosaur stage and he said: "Wow, triceratop horns!" (because it was very puffy in the corners-) Now all my kids just call this “triceratops" to this day.” Custardy, buttery, and light, this is a perfect sweet breakfast item”.

Ingredients

  • 1 c milk Several shakes salt
  • 1 c flour
  • 3 T. melted butter (I reduced this from
  • 6 eggs the original 1⁄2 cup butter. It is fine with
  • 1-2 t. vanilla much less
  • Turn oven to 425. Put butter in a 9 x 13 casserole pan and throw pan in the oven while
  • it heats up and you make the batter. Pour milk in blender to one cup line. Add all other
  • ingredients and blend until smooth- pour mixture into pan in oven when butter is
  • completely melted. Bake about 18-20 minutes or until puffed and golden. Serve
  • immediately. Great with yogurt and honey, sour cream and fruit, or maple syrup.
