Frozen Chocolate Pie (Grandma’s Famous)

An Oertle family classic (my mom’s side of the family) from my great-grandma Alice Farnsworth Oertle. In my moms words : “Everyone dreams about this pie Grandma used to make for us. The problem was that there were so many people you usually only got one piece! You can see that our family’s addiction to chocolate started long ago... Grandma used to make this TERRIBLY TIME-CONSUMING pie for all 20 or so of us. That meant a triple recipe! And the next day she would get up and make homemade doughnuts for breakfast— WHAT A WOMAN!” Filling is enough for one deep dish pie pan or two normals ones.

Ingredients

  • Crust:
  • ½ cup butter, melted
  • ¼ cup sugar
  • 1 ½ cups dark chocolate cookie crumbs (take your pick but Grandma always used Nabisco cookies)

Method

    Stir together crust ingredients in pie pan - press onto sides and bottom with back of spoon. Bake at 325 for 10 min. Remove and cool.

    Filling: 1 tsp. vanilla 2 egg whites 2 egg yolks ¼ cup sugar 1 cup chocolate chips, melted in the 1 cup Whipping cream microwave 8 oz. cream cheese, softened ¾ cup chopped walnuts ¼ cup sugar In medium bowl beat egg whites till stiff, add sugar slowly and set aside. In second bowl beat whipping cream and set aside. In third bowl beat cream cheese with sugar and vanilla Add 2 egg yolks and melted chips. When completely combined, fold in egg whites, cream and 3/: cup chopped walnuts. Pour into cooled pie crust. Freeze until firm. Remove from freezer 4-5 minutes before serving so you can cut it more easily. Heaven!
