Melody and I love PF Changs lettuce wraps and came up with our version of them. You can replace the chicken with any other ground meat if you want something else!

Ingredients
- 1 lb ground chicken
- 1 Tbsp sesame oil
- ½ onion minced
- 1 Tbsp rice vinegar
- ½ cup red or green pepper diced
- 1 Tbsp peanut butter
- ½ cup celery diced
- 1 Tbsp honey
- 1 tomato diced
- 1 Tbsp grated fresh ginger
- 1 8 oz can water chestnuts drained and
- 1/2 tsp garlic powder minced
- 3-4 cloves garlic minced
- To Finish:
- ¼-½ cup of crushed peanuts For the Sauce - Your favorite lettuce or salad (Butter
- 3 Tbsp soy sauce Lettuce is best; sometimes it’s called
- 3 Tbsp hoisin sauce Boston Lettuce )

Method

Whisk together sauce ingredients until well combined. If you use a firmer peanut butter you may need to melt it in the microwave for 30-60 seconds and ensure everything is well-mixed. Heat oil in a frying pan. Once hot, add onions, cook until golden.

Add peppers and water chestnuts; cook for about 5 minutes or until peppers are becoming soft. Add chicken and cook together for several minutes, breaking so the chicken isn’t in chunks. Add sauce and simmer on low heat until the chicken and veggies are evenly coated and everything is heated through. Serve in lettuce leaves, on top of your favorite Asian salad, or over noodles or rice!
