BBQ Shepards Pie, preserved in the Brown Family Cookbook 2020.

Ingredients
- 1 lb ground beef (turkey good too)
- ½ diced onion
- 1 bag mixed frozen veggies (peas, carrots, corn, green beans)
- 2-3 Sweet potatoes (depending on size!)
- ¼ cup Greek yogurt Hearty dollop butter
- 3-4 good squirts of favorite BBQ sauce
- 1 cup shredded cheese (optional)
- 1. Cook meat with diced onion and season according to your heart’s desire
- 2. Pierce sweet potatoes and cook until tender in microwave or instant pot
- 3. Add in bag of frozen veggies to meat and allow to cook/steam for a couple minutes until no longer frozen
- 4. Add bbq sauce to meat/veggie mixture
- 5. Remove skins from sweet potatoes and mash with fork in a bowl
- 6. Add Greek yogurt and butter to sweet potatoes
- 7. Place meat mixture into a 8x10 pan, spread potato mixture on top, and then top with
- cheese if desired
- 8. Bake at 350 until warmed through or until cheese is melted and delicious looking
