Banana Bread

Four ripe bananas make this an especially moist loaf, while a little cinnamon and brown sugar give it a warm, familiar flavor.

Ingredients
- 4 bananas, about 1⅓ cups mashed
- 1 large egg
- 1 Tbsp or more vanilla extract
- 3 Tbsp light brown sugar
- 2 Tbsp granulated sugar
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1½ cups all-purpose flour
- 2 Tbsp unsalted butter, melted
Make it yours
- Substitute applesauce for the melted butter.
- Line the bottom of the loaf pan with parchment for an easier release.

Method

Heat the oven to 350°F. Grease a standard 9 × 5-inch loaf pan; line the bottom with parchment if desired.

Mash the bananas in a mixing bowl. Add the egg, vanilla, both sugars, and cinnamon, then stir well.

In a separate small bowl, stir together the flour, baking powder, baking soda, and salt.

Add the dry ingredients to the banana mixture and stir to combine.

Gently stir in the melted butter.

Bake for 35–45 minutes, until a toothpick inserted into the center comes out clean.
