Applesauce Donut Nuggets, preserved in the Brown Family Cookbook 2020.

Ingredients

  • 2 ¾ cups flour
  • ½ cup granulated sugar
  • 1 ½ tsp. Baking powder
  • ½ cup brown sugar
  • ½ tsp. Cinnamon
  • 1 ½ Tbsp. Oil
  • ½ tsp. Nutmeg
  • ½ tsp. Vanilla
  • ¼ tsp. Cloves
  • ¼ cup boiled cider (or frozen apple juice
  • ½ tsp. Baking soda concentrate)
  • 1 cup applesauce
  • ¼ cup milk
  • 2 eggs

    Stir baking soda into applesauce. Beat together eggs, sugars, and oil. Whisk together dry ingredients. Add applesauce and vanilla to egg mixture. Add dry ingredients alternately with boiled cider and milk.

    In a deep skillet or electric fry pan, heat 2 inches of oil to 350 degrees. Drop batter by Tablespoons into the oil and fry until golden brown all over — about 3 minutes of frying time. (If you use a Tablespoon sized cookie scoop (dipped in hot oil before each scoop) the donuts will turn themselves over in the hot oil.) Drain on paper towel-lined cookie sheet. Toss donut nuggets in sugar while still warm.
