Ingredients
- 4 boneless pork chops (3/4 inch thick)
- 1/4 Cup flour
- 1/2 tsp. Kosher salt
- 1/2 tsp. Pepper
- 1/2 tsp. Garlic powder
- 1 Cup high-quality apple cider
- 1/4 Cup apple butter
- 1 Tbsp. water
- 1 1/2 Tbsp. stone ground mustard
- 1 tsp. pressed garlic
- 1/2 recipe of caramelized onions (below)

Method

Preheat oven to 375 degrees.

Heat some olive oil in a large, oven-safe skillet.

Combine flour, salt, pepper, and garlic powder on a plate. Dredge pork chops in flour mixture and brown in skillet 2-3 minutes on each side, until brown & crispy. While the chops are browning, combine cider, apple butter, water, garlic, and mustard. When chops are done browning, add cider mixture to the pan and cook for 1-2 minutes until sauce begins to evaporate and thicken.

Remove from heat and evenly distribute the caramelized onions over the pork chops.

Cover the pan with a lid and place in oven for 30 minutes.

Caramelized Onions: 2 large sweet onions, halved and thinly sliced 1/2 tablespoon olive oil 1/2 tablespoon butter Kosher salt (& black pepper, if desired)

Heat oil & butter in a large skillet over medium-high heat. Add onions. Toss with spatula until coated with butter/oil. Reduce heat to medium-low and stir frequently for about 10 minutes. Sprinkle with salt and continue to cook, stirring every few minutes for another 15-30 minutes or until onions are a rich amber color.
